- 40g Mandolat® soluble mixture
- 500ml water
- 1 untreated lemon
- A pinch of cinnamon/li>
- A pinch of Bourbon vanilla powder
- Rice syrup qs
- 4g Agar
Dilute the agar and the soluble mixture with a whisk in a saucepan, add the grated lemon peel and the vanilla powder and sweeten with rice syrup to taste. Boil the mixture and mix every now and then with a whisk, then lower the heat and simmer for 2 minutes and continue mixing to avoid clumps. Pour the mixture into the molds and let cool at room temperature, then refrigerate for two hours.
