Spelt cookies with turmeric

biscottiThese light and crumbly cookies with lemon and turmeric are just perfect for breakfast.


  • 250g spelt flour
  • 100g potato starch
  • 130g brown sugar
  • 1 teaspoon of turmeric powder
  • A pinch of Bourbon vanilla powder
  • 1 untreated lemon
  • Half a teaspoon of cream of tartar
  • 125g Burrella®
  • 100ml cold water

Fill a bowl with flour, potato starch, sugar, spices, cream of tartar and grated lemon peel and mix the dry ingredients carefully. Make a well in the middle of the dry ingredients and add Burrella and cold water, in order to obtain a rather firm and stiff dough. Roll out the short crust pastry (it should be half 5mm) and cut disks in the dough with a food ring mold. Bake in a convection oven at 200° for 20 minutes, until the cookies are dry and crumbly.
